After sleeping in a little this morning I decided to bake some healthy snacks and since we went a little crazy at Nutrition S'Mart last night I had plenty of ingredients.
Our haul from the store plus I had already put some stuff away but thanks to the lady finally picking up/paying for the red couch our bank account didn't feel it.
I decided to start with some yummy looking almond bars.
- 2 Tb spoon flax seed meal
- 1/2 cup agave nectar or honey or a combination of both
- 1 tsp kosher salt
- 1 cup coarsely chopped almonds
- 1 cup unsweetened coconut
- 4 medjool dates coarsely chopped
Bake in the oven for 25 minutes at 350 degrees.
This was the start of the energy bars, I mixed all of the ingredients and baked them in a square baking dish but when I tried to cut the bars up they fell apart. So I pressed the broken bars into a muffin tin and this is how they came out.
Next time I will make them in one of these so I can skip the mess.
